The Science of the Peaberry
Inside every coffee cherry, two seeds (beans) typically grow face-to-face, developing their characteristic flat sides. But in roughly 5% of coffee cherries, only one seed is fertilized. With no companion bean to press against, this lone seed grows freely into a small, round, oval shape — the peaberry.
Why Does Shape Matter?
The round shape of a peaberry bean isn't just a curiosity — it has real implications for flavor. Because the bean is smaller and denser, it roasts more evenly, with heat circulating uniformly around its entire surface. The result? A cup that's often described as:
- Brighter — with a more vibrant, lively acidity
